Beet and rice salad full of flavor and vitamins. This salad is something different, very rich and colorful thanks to the fact that beets have many beta carotenes. Prepare this recipe for these summer days, giving the family a delicious new option to enjoy.

Ingredients

6 portions
  • 3 beets, peeled and cooked
  • 10 cherry tomatoes, washes
  • 1 bunch parsley, disinfected
  • 1 cup white rice, Cooked
  • enough olive oil
  • to taste salt and pepper

Preparation

Cut the cooked beets into medium squares and place them in a salad bowl.
Add all the remaining ingredients except the rice and mix everything.
Since our salad is well mixed, add the rice until the end and incorporate with slow movements so that it does not beat.
Put in the refrigerator for 20 to 30 minutes and serve.

TIPS

It can be served with slices of rye bread.
