This is a simple salad that is very rich and easy to make. The flavor of the trout and the combination of blueberries make even the most demanding palate bow down to these simple but very pleasant flavors.

Ingredients

4 portions
  • 170 grams arugula
  • 120 grams trout, smoked, chopped
  • 1 1/2 cups blueberry, fresh
  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon peppermint, chopped
  • 1/2 tablespoons salt
  • 1/4 tablespoons black pepper, ground

Preparation

In a bowl combine the arugula, trout, and blueberries.
In a cup mix the oil, vinegar, mint and pepper.
Divide the salad into four plates and drizzle each with the dressing.
