This recipe involves sweet and sour flavors due to the combination of watermelon; sometimes I add a bit of habanero sauce, but that's personal and depends on tolerance for spiciness. Very quick and easy.

Presentation

Serve by placing the watermelon on a plate first, then our mix of lettuces, the jicama, and a few blueberries, finishing with the chicken and a drizzle of our balsamic dressing (can be substituted with honey and dijon dressing).

Tips

You can batter the chicken instead of breading it for a crunchier texture with a cup of wheat flour, 2 tablespoons of Knorr Swiss, and a pinch of pepper. To avoid using egg, just soak the breast strips in water and then coat them in the mix.
