Ingredients

4 portions
  • 1 Romaine lettuce
  • 900 grams pear
  • 1 gram red pomegranate
  • 150 grams goat cheese
  • 100 grams walnut
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar

Preparation

Defoliate the lettuce, leave. wash, disinfect and drain. It can be hydroponic, escarole, French, Italian or a mixture.
Peel the pomegranate shell and reserve the grains.
Cut the cheese in 6 or 4 parts of half a centimeter thick, with a damp knife to avoid breaking it.
Wash the pears that are soft, remove the center with a discourager, and cut into 1 cm slices, then split into squares, leave at the end to avoid oxidizing.
In a Braun type hand processor, put the oil, the balsamic and the sugar and process until integrating. It has a cajeta tone with a bittersweet flavor.

PRESENTATION

Put in a bowl or direct on the plate, a bed of lettuce, arrange the pears and cheese artistically, spread the pomegranate and then the nut. Dress with the bittersweet dressing.

TIPS

The goat cheese with ashes or without, can be changed by manchego or chihuahua. Pears can be anjou, Bartlett, red ... Align almost to serve ..
