Ingredients

2 portions
  • 100 grams parmesan cheese, grated
  • 1 tablespoon flour
  • 1/2 teaspoons rosemary
  • 6 leaves arugula, chopped
  • 1/4 cups alfalfa sprouts
  • 4 strawberries, rooms
  • 4 almonds, chopped
  • 1 teaspoon balsamic vinegar, for the vinaigrette
  • 1 tablespoon olive oil, for the vinaigrette
  • salt, to taste, for the vinaigrette

Preparation

Mix the Parmesan cheese with the flour and the rosemary finely chopped.
Heat a non-stick pan and serve three tablespoons of the preparation.
Distribute to form a thin layer.
Cook for 30 seconds over medium heat and turn over.
Remove from the heat when it has browned on both sides, place in a circular container (can be a glass) so that it takes the shape of a basket and lets cool.
Repeat the operation until the parmesan mixture is finished.
For the vinaigrette: Add the vinegar to olive oil, season with a little salt and beat to integrate completely.

PRESENTATION

Serve each basket with a little arugula, alfalfa germ, strawberry and almond. Bathe with the vinaigrette.
