This rich salad is composed of green lettuce, mandarin segments, feta cheese, purple onion and tomato in pieces. The dressing is made with mandarin juice, lemon and olive oil.

Ingredients

8 portions
  • 300 grams Friseé lettuce, frisé in pieces
  • 6 tangerines, without seeds in segments
  • 1 fennel, finely sliced
  • 1 red onion, slice thinly
  • 2 tomatoes, red cubes or slices
  • 200 grams feta cheese, in cubes
  • 1 bunch fresh parsley, chopped
  • wheat pasta, FOR THE DRESSING
  • 1 tangerine, its juice
  • 1 lemon, its juice
  • 4 tablespoons olive oil
  • 1 tablespoon brown sugar

Preparation

In a deep bowl, mix all the ingredients of the dressing. Season with salt and pepper and save.
To make the salad in a deep bowl, mix the lettuce, parsley, onion and fennel. Add half of the vinaigrette and mix well.
Place a bunch of the salad mix on each individual plate. Add 5-6 slices of mandarin, 2-3 cubes of tomato and 2-3 cubes of feta cheese.
Spoon the leftover dressing onto the plates and serve.

PRESENTATION

Decorate the plate with a few leaves of fresh parsley.
