This rich salad is composed of green lettuce, mandarin segments, feta cheese, purple onion and tomato in pieces. The dressing is made with mandarin juice, lemon and olive oil.

Ingredients

8 servings
  • 300 grams of Friseé lettuce frisé in pieces
  • 6 pieces of tangerine without seeds in segments
  • 1 piece of fennel finely sliced
  • 1 piece of red onion slice thinly
  • 2 pieces of tomato red cubes or slices
  • 200 grams of feta cheese in cubes
  • 1 bunch of fresh parsley chopped
  • wheat pasta FOR THE DRESSING
  • 1 piece of tangerine its juice
  • 1 piece of green lemon its juice
  • 4 spoonfuls of olive oil
  • 1 tablespoon of brown sugar

    Preparation

    In a deep bowl, mix all the ingredients of the dressing. Season with salt and pepper and save.
    To make the salad in a deep bowl, mix the lettuce, parsley, onion and fennel. Add half of the vinaigrette and mix well.
    Place a bunch of the salad mix on each individual plate. Add 5-6 slices of mandarin, 2-3 cubes of tomato and 2-3 cubes of feta cheese.
    Spoon the leftover dressing onto the plates and serve.

    PRESENTATION

    Decorate the plate with a few leaves of fresh parsley.
