Enjoy this melon salad with grated carrot, ideal to serve as a garnish or dessert. It is sweetened with honey, which provides antioxidants, in addition to promoting digestion and is perfect for people who are careful to consume refined sugars.

Ingredients

4 portions
  • 1 1/2 cups melon, in small cubes
  • 1 cup carrot, grated
  • 1 cup sour cream, reduced fat
  • 1/2 cups pecan nut, chopped
  • 2 tablespoons bee honey
  • pecan nut, chopped
  • peppermint, leaves

Preparation

In a bowl, mix the melon with the carrot, the low-fat cream, the walnut and the honey until integrated. Refrigerate for at least 30 minutes.
Serve in individual servings, garnish with walnut and mint leaves.

PRESENTATION

Garnish with a little more chopped walnut and mint leaves.

TIPS

You can use agave honey to sweeten, as this honey does not contain gluten, it is also recommended for people with celiac disease.
