The Panzanella salad is a salad made with tomatoes, baked bread, garlic, lemon, onion and olives.

Ingredients

6 portions
  • 5 cups French bread, cut into thick cubes
  • 1/3 cups olive oil
  • 1/3 cups red wine vinegar
  • 3 tablespoons lemon juice
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon garlic
  • 2 cucumbers, without seeds and cut into cubes
  • 2 tomatoes, without seeds and cut into cubes
  • 1 red onion, finely chopped
  • 1/3 cups pitted kalamata olive
  • 1/3 cups basil

Preparation

Preheat the oven to 180 degrees centigrade.
On a baking sheet, place the bread in cubes and bake for 10 minutes or until the bread is lightly toasted.
In a large bowl combine the croutons with the cucumbers, the tomato, the onion, the olives and the basil.
In a small bowl, combine the vinaigrette: oil, vinegar, lemon juice, parsley, and garlic.
Add the vinaigrette to the salad and mix well.

PRESENTATION

Serve in a large salad bowl and garnish with a little grated Parmesan cheese.
