  • 1/4 cups raw sugar, for the vinaigrette
  • 1 clove garlic, finely chopped, for the vinaigrette
  • 1 tablespoon lemon juice, for the vinaigrette
  • 1/4 cups basil leaf, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette
  • to taste salt, for the vinaigrette
  • to taste black pepper, for the vinaigrette
  • enough spray oil, for the basket
  • 2 cups parmesan cheese, for the basket
  • 1 cup baby spinach, for the caprese salad
  • 1 cup mozzarella cheese, in spheres, for caprese salad
  • 1 cup cherry tomato, in halves, for caprese salad
  • enough basil leaf, to decorate


For the vinaigrette, in a pot over medium heat, heat the balsamic vinegar with the muscovado sugar for 15 minutes until a thick consistency is obtained. Once cold, mix in a bowl with garlic, lemon juice, basil and olive oil; Season with salt and pepper. Reservation.
For the baskets, in a hot Teflon pan, put oil in a spray, add the Parmesan cheese in a circular manner and leave it on fire until it begins to form a scab; then lift the circle of parmesan with the help of a stick and place on a container that has the shape of a basket. Let cool and reserve.
On the basket, place the spinach leaves, the mozzarella cheese spheres and the cherry tomato. Pour the balsamic vinaigrette and decorate with the basil leaves.


Accompany with balsamic vinaigrette and basil. Serve with basil leaves.


If you want a special touch, add some fresh fruit like apple or pear to the salad.
