Preparation
Cook the pasta in water with boiling salt, about 8 to 9 minutes or whatever it says on the package.
Drain the pasta and season with a thread of olive oil. Reserve separately.
Peel and cut the mango into squares.
Wash and dry the arugula and the salad.
Wash the cherry tomatoes and cut in half.
Clean the zucchini, cut into thin slices and blanch for one minute in boiling water. Drain and reserve.
Beat 6 tablespoons of olive oil, 2 tablespoons of vinegar and salt to taste until emulsifying, to prepare the vinaigrette. Reserve.
In a bowl, mix the pasta, mango, arugula, salad leaves, the zucchini slices and the cherry jitomatitos matches.
Dress with the vinaigrette, sprinkle the chopped nuts and serve.
