Spaghetti Pasta Salad with Chicken

An ideal recipe to share with family and friends in the afternoon. A colorful and tasty salad combines perfectly with the spaghetti to create unique sensations preserves freshness and the good taste of each ingredient.

  • 200 grams La Moderna® spaghetti
  • 200 grams chicken breast, in squares
  • 4 cups red sangria lettuce, in slices
  • 1 cup tomtato, in slices by half
  • 1 cup golden apple, peeled in cubes
  • 1/2 cups white onion, in slices by half
  • 3/4 cups red onion, in slices by half
  • 1/2 cups carrot, grated
  • 1/4 cups fresh coriander, match
  • 1 avocado, in squares
  • 11/2 limes
  • water, for cooking
  • 2 tablespoons olive oil, for cooking
  • 1 pinch salt, for cooking
  • 80 grams butter, for the La Moderna® Spaghetti
  • 1 pinch garlic, for the La Moderna® Spaghetti
  • 2 tablespoons fresh coriander


For the Spaghetti La Moderna®, in a pot of 30 cm in diameter and approximately 8 cm deep or where Spaghetti La Moderna® fits well, fill 2/3 parts of water and bring to boil with the 2 tablespoons of oil and the pinch of salt. Once boiled the water add the Spaghetti La Moderna® and cook for 10 minutes over low heat, take care that it does not stick to the bottom of the pot and move gently to avoid beating the pasta. Then turn off and let it rest for another 5 minutes. Strain and rinse with cold water.
We wash the pot and dry perfectly to prepare the Spaghetti La Moderna®. We take 30 g of butter with a little oil to avoid getting bitter or burn and to medium heat the pot. Once hot empty the Spaghetti La Moderna® and shake so that it does not stick. Add another 40 grams of butter in squares scattered in the pasta, the 2 tablespoons of coriander and season with salt-garlic and pepper to taste. Let cool away from the stove.
For Chicken: In a pan put 10 grams of butter and heat over medium heat. To avoid burning or bitter butter add a dash of oil. Already hot add the chicken breasts by halves and fry until browning one side, and before turning season with salt-garlic and pepper to taste and turn to brown the other side, making sure that the inside of the chicken is perfectly sewn. To verify take a piece make a cut in the thickest part and if they are ready they are passed to a plate. Remove the excess butter if it should remain.
Once the chicken is cold, we break it into approximately 1cm squares and leave to move on to the other ingredients.
For Lettuce Sangria we separate their leaves, approximately half lettuce; we wash them with water and let them soak in a bowl with disinfectant for a period of 10 minutes.
The rest of the ingredients are washed well. For the tomato, we remove its projection, we split in half lengthwise and then in slices.
For onions, of similar sizes, remove the dried layers. In the white onion, we take about 4 cm, cut and then thin slices. For the purple onion we take a little more, about 6 cm and cut equally into thin slices.
From the cilantro we take some twigs (10-15 aprox), wash and drain well. We separate the leaves from the talles, and the leaves cut them finely.
For the Carrot, we wash well and with a "pela-papas" we remove the outside of the carrot. We pass a grater through the medium holes and grate carefully.
For the apple we leave it at the end to avoid darkening. We take the apple, remove the center and peel to remove the peel. We cut in half and sliced ​​1 cm wide and then cut into squares equal 1 cm x 1 cm. To preserve the apple without wilting, we leave it soaking in a bowl with water and a little juice of half a lemon.
The avocado, cut in half, remove the bone and start in boxes of 1 cm x 1 cm without removing the shell.
We split the lemon and squeeze and leave to mix.
In a large bowl we are going to empty the Spaghetti La Moderna®, we are going to cut it slightly so that the noodles are not so big. Empty the lettuce, tomato, onions, carrot, cilantro, drained apple, avocado and mix until ingredients are integrated. Add the lemon juice and season with salt-garlic and pepper to taste.
It is served and we can accompany it with our favorite dressing and cookies or bread to taste. BON APPETITE!


You can eat the salad alone or accompany other dishes such as baked potatoes. And season with the favorite dressing.


At the time of cooking the Spaghetti La Moderna®, you have to wait until the water boils, otherwise you can beat and make paste. Empty and check down the fire. To fry with butter it is advisable to add a little oil to avoid burning and bitterness. When seasoning, you have to constantly taste until you get the desired flavor, so do not overdo the seasonings.
