Potato Salad with Egg

Ingredients

6 servings
  • 5 pieces of egg cooked peeled
  • 1 1/4 kilos of potato girls
  • 1/2 Cup of Mayonnaise
  • 1/2 Cup of sour cream
  • 1 tablespoon of Dijon mustard
  • 1/2 piece of red onion chopped
  • 1/2 Cup of fresh dill chopped
  • 1/4 of Cup of gherkin chopped
  • 1 tablespoon of gherkin juice
  • 1/2 Cup of celery
  • 1 teaspoonful of sweet paprika

    Preparation

    Cut the eggs into slices. Reservation.
    In a large pot mix the potatoes, 2 teaspoons of salt and water to boil. Boil at high temperature uncovered for 25 minutes, until the potatoes are soft and can be easily carved with a fork.
    Drain and when cool, peel and cut into cubes.
    Place the hot potatoes in a large bowl.
    In a small bowl, mix mayonnaise, sour cream, pickle juice and mustard. Season with salt and pepper.
    Cover the potatoes with spoonfuls of the prepared mixture until completely integrated.
    Add the chopped onion, dill, pickles, celery and 1 teaspoon of salt and 1/2 teaspoon of pepper. Stir well.
    Add the egg slices. Test and correct the seasoning.
    Place the salad in a salad bowl, sprinkle with paprika and refrigerate for at least 1 hour (may be a day before).
    Sprinkle with chives before serving.
