Ingredients: 1 can tuna, drained; 1/4 cucumbers, large and seedless; 1 carrot, finely grated; 2 tablespoons low-fat mayonnaise; salt, and pepper to taste

Drain the water from the tuna can and, using a fork, crumble the tuna so that there are no large pieces left. Remove the seeds from the cucumber and cut it into small pieces. Grate the carrot using the smallest side of a grater.
