Ingredients

4 portions
  • 4 cups Water
  • 1 tablespoon salt
  • 2 cups quinoa, rinsed
  • 1 broccoli, bleached
  • 1 bunch asparagus, in pieces, bleached
  • 2 cups red grapes
  • 1 cup cranberry
  • 1 cup caramelized walnut, in pieces
  • 1 cup Oli de Nutrioli® Olive Oil, for the vinaigrette
  • 2 cloves garlic, finely chopped, for the vinaigrette
  • 1 1/2 cups lemon juice, for the vinaigrette
  • 3 tablespoons orange juice, for the vinaigrette
  • 1 teaspoon salt, for the vinaigrette
  • 1/2 teaspoons black pepper, for the vinaigrette

Preparation

In a pot over medium heat, boil the water with the salt and add the quinoa. Lower the heat and cover 20 minutes. Cool
In a bowl, mix the quinoa with broccoli, asparagus, grapes, cranberries and nuts.
For the vinaigrette, crush the garlic with the Nutrioli® Oli Oil. Add the juices, salt and pepper and emulsify with the oil.
Serve the salad with the vinaigrette.

PRESENTATION

Serve with the vinaigrette.

TIPS

Rinse quinoa thoroughly before using to remove saponin.
