If you are looking to eat healthy and delicious, this is the perfect option. This salad combines quinoa with spinach, red pepper and a lemon and ginger dressing. It is very easy to make it is ideal for lunch or dinner.

Ingredients

4 portions
  • 1 cup quinoa, cooked and drained
  • 2 cups baby spinach
  • 1 Bell pepper, yellow
  • 1 cup cranberry
  • 1 Avocado from Mexico, diced
  • 4 tablespoons lemon juice, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette
  • 1/2 teaspoons fresh ginger
  • salt, to taste

Preparation

In a bowl mix quinoa with spinach, red pepper, blueberries and avocado.
For the vinaigrette, mix the lemon juice with olive oil, ginger and salt until emulsified.
Dip the salad with the vinaigrette.

TIPS

Cook the quinoa in boiling water for 12 minutes.
