Quinoa Salad with Lemon Dressing

If you are looking to eat healthy and delicious, this is the perfect option. This salad combines quinoa with spinach, red pepper and a lemon and ginger dressing. It is very easy to make it is ideal for lunch or dinner.

Ingredients

  • 1 Cup of quinoa cooked and drained
  • 2 cups of baby spinach
  • 1 piece of Bell pepper yellow
  • 1 Cup of blueberry or cranberry
  • 1 piece of avocado diced
  • 4 spoonfuls of lemon juice for the vinaigrette
  • 1/2 Cup of olive oil for the vinaigrette
  • 1/2 teaspoonful of fresh ginger
  • Salt to taste

    Preparation

    In a bowl mix quinoa with spinach, red pepper, blueberries and avocado.
    For the vinaigrette, mix the lemon juice with olive oil, ginger and salt until emulsified.
    Dip the salad with the vinaigrette.

    TIPS

    Cook the quinoa in boiling water for 12 minutes.
