Quinoa is a very rich grain that contains protein and is very healthy. This recipe for quinoa with lemon vinaigrette vegetables and raisins is delicious. Prepare it to accompany another dish or to eat alone.

Preparation
Boil the quinoa in water in a pot according to the instructions in the box. (It would usually be 4 cups of water for the 2 cups of quinoa).
Once it begins to boil, lower the heat, cover and cook until all the water has been absorbed and the quinoa is well done.
In a pan cook the asparagus with 1 tablespoon of oil over medium heat until tender (10-15 minutes), remove from heat.
Mix the quinoa with the asparagus in the pan.
In a small deep bowl, mix olive oil, lemon juice, salt and pepper.
Add the vinaigrette and raisins and mix well. Serve
