Ingredients

  • 1/3 of Cup of balsamic vinegar for the vinaigrette
  • 1 tablespoon of Dijon mustard for the vinaigrette
  • 1 tablespoon of rosemary for the vinaigrette
  • 1 tablespoon of Water for the vinaigrette
  • 1 tablespoon of lemon juice for the vinaigrette
  • to taste of salt and pepper thick, for the vinaigrette
  • 3/4 of Cup of Oli de Nutrioli® Extra virgin Olive Oil for the vinaigrette
  • 1 Cup of goat cheese
  • 1/4 of Cup of Serrano ham finely chopped
  • 1 teaspoonful of old mustard
  • 3 spoonfuls of blueberry
  • 1 Cup of caramelized walnut finely chopped
  • 2 cups of Lettuce sangria chopped, washed and disinfected
  • 2 cups of french lettuce chopped, washed and disinfected
  • 1 Cup of arugula chopped, washed and disinfected
  • 1/4 of Cup of raspberry
  • 1/4 of Cup of blueberry
  • 1/4 of Cup of blackberry

    Preparation

    For the vinaigrette, blend the balsamic vinegar, mustard, rosemary, water, lemon juice, salt, pepper. Continuing to liquefy, add Oli de Nutrioli® extra virgin olive oil little by little and continue blending until emulsified.
    In a bowl, mix the goat cheese, the serrano ham, the old mustard and the blueberries. Form balls with your hands and wallow in caramelised nuts.
    In a salad bowl, gently mix the lettuce with arugula, raspberries, blackberries, blueberries and goat cheese balls.
    Serve the salad with the vinaigrette.
