Try this salad with roasted flank steak accompanied by a parsley and cilantro vinaigrette. Ingredients

  • 1 French Lettuce Eva®
  • 6 pita breads, for the bread basket
  • enough cooking spray oil, for the bread basket
  • 1 1/2 cups flank steak, in strips
  • 1 cup pumpkin, in slices
  • 1 cup red bell pepper, in pictures
  • 1/2 cups corn, yellow
  • 3 tablespoons red wine vinegar, for the vinaigrette
  • 1 clove garlic, for the vinaigrette
  • 1 tablespoon oregano, for the vinaigrette
  • 1/2 tablespoons paprika, for the vinaigrette
  • 1/2 cups parsley, for the vinaigrette
  • 1/2 cups coriander, for the vinaigrette
  • to taste salt, for the vinaigrette
  • to taste black pepper, for the vinaigrette
  • 1 cup olive oil, for the vinaigrette
  • 1/2 cups cherry tomato, in halves
  • 1/4 cups red onion, in strips

Preparation

Preheat the oven to 180 ° C. For the bread basket, sprinkle a bowl with oil spray and introduce the pita bread, place a smaller bowl on the pita bread and bake for 20 minutes at 180 ° C. Cool and unmold.
Grill the meat, pumpkin, peppers and corn. Reservation.
For the vinaigrette, blend red wine vinegar, garlic, oregano, paprika, parsley, cilantro, salt and pepper; while still blending, pour the olive oil in the form of a thread to emulsify, that is, until fully integrated.
On a board, defoliate Eva® French lettuce.
Place the Eva® French lettuce leaves on the bread basket, add the flank steak, the roasted pumpkin, the roasted bell pepper, the yellow corn, the cherry tomato, the purple onion and pour the parsley vinaigrette; Decorate with coriander to your liking.
