Preparation
Mix the balsamic vinegar, olive oil, and sugar well. Once stirred put on the arugula and stir well.
Place the arugula on each plate and decorate with quarters of figs (also bathed in the dressing), serrano ham rolls and pine nuts.
Serve immediately.
