Preparation
Prepare the dressing. Mix the vinegar with the dijon mustard and chopped thyme. Little by little add the olive oil, stirring with a fork or whisk to emulsify it. Season with salt and pepper.
Mix the lettuce with the blueberries, apple and red onion. Break up the goat cheese with a fork and finally add the walnuts.
Pour dressing all over salad and stir.
Serve immediately to prevent lettuce from soaking and wilting.
