Ingredients

8 servings
  • 1/4 of Cup of red wine vinegar
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of fresh thyme chopped
  • 3/4 of Cup of olive oil
  • spring mix lettuce of different kinds
  • 1 1/2 cups of cranberries
  • 1 red onion Very thin slice
  • 1 1/2 cups of nut pralines
  • 1 1/4 cups of goat cheese fallen apart
  • Salt to taste
  • black pepper to taste
  • 2 Red apples cut into cubes
  • 1 bunch of spinach

    Preparation

    Prepare the dressing. Mix the vinegar with the dijon mustard and the chopped thyme. Gradually add the olive oil moving with a fork or balloon whisk to emulsify. Season with salt and pepper.
    Mix the lettuce with the blueberries, the apple and the purple onion. Undo the goat cheese with a fork and finally add the nuts.
    Pour the dressing through the salad and stir.
    Serve immediately to prevent lettuce from soaking and wilting.

    TIPS

    If you want it to be more light you can reduce the amount of olive oil.
