Ingredients

8 portions
  • 1/4 cups red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme, chopped
  • 3/4 cups olive oil
  • spring mix lettuce, of different kinds
  • 1 1/2 cups cranberry
  • 1 red onion, very thin slice
  • 1 1/2 cups walnut, pralines
  • 1 1/4 cups goat cheese, fallen apart
  • salt, to taste
  • black pepper, to taste
  • 2 Red apples, cut into cubes
  • 1 bunch spinach

Preparation

Prepare the dressing. Mix the vinegar with the dijon mustard and chopped thyme. Little by little add the olive oil, stirring with a fork or whisk to emulsify it. Season with salt and pepper.
Mix the lettuce with the blueberries, apple and red onion. Break up the goat cheese with a fork and finally add the walnuts.
Pour dressing all over salad and stir.
Serve immediately to prevent lettuce from soaking and wilting.

TIPS

If you want it to be lighter, you can reduce the amount of olive oil.
