Presentation

Garnish with goat cheese and blueberries or caramelized nuts. Serve immediately.

Tips

Tip 1: Remember to dry the spinach well before sautéing it, as wet spinach does not sauté well and tends to have a stale taste. Tip 2: You should regularly stir the spinach to ensure it cooks evenly and be very careful not to overcook it (if it turns blackish or gray, it is overcooked). Just wait for it to take on a deep green color and reduce in volume to know it's ready.
