A spinach salad with balls of goat cheese, praline, pear and a balsamic reduction vinaigrette.

Preparation
Bring the balsamic vinegar to a boil in a low heat pot until it reduces to just 1/4 cup, remove from heat.
Take the goat cheese and make small balls with your hands, you should make approx. 16 balls
Half of the cheese balls brown them with the ground praline, the other half leave them uncooked.
Combine in a deep bowl the balsamic vinegar with the olive oil, salt and pepper.
Mix the spinach with half the vinaigrette in a large bowl.
Take the pears and cut them into thick slices. Take the tomatoes and cut them into halves.
Assemble each salad plate by first placing a bed of spinach, on it place 2 balls of natural goat cheese, 2 balls of goat cheese with walnut, 4 cherry tomatoes, 4-6 slices of pear and what is left over from the walnut praline
With the vinaigrette that was left over, draw on the plate and spinach.
