Prepare this delicious and fresh spinach salad with raspberry vinaigrette, which is accompanied with delicious pieces of breaded goat cheese, a little avocado, blueberries and a touch of mango. You'll love it!

Ingredients

6 portions
  • 200 grams goat cheese, in thick slices, cold
  • 1/2 cups flour, to bread
  • 1 egg, to bread
  • 1/2 cups ground bread, to bread
  • 1 teaspoon fine herbs, to bread
  • 3 tablespoons Pure Nutrioli® Soy Edible Oil
  • 1 cup raspberry, for the vinaigrette
  • 2 tablespoons red wine vinegar, for the vinaigrette
  • 2 tablespoons bee honey, for the vinaigrette
  • 1/4 teaspoons coarse salt, for the vinaigrette
  • 1/8 teaspoons black pepper, for the vinaigrette
  • 1 teaspoon Dijon mustard, for the vinaigrette
  • 1/2 lemons, just the juice, for the vinaigrette
  • 1/4 cups Oli de Nutrioli® Extra virgin Olive Oil, for the vinaigrette
  • 3 cups baby spinach
  • 2 avocados, cut into cubes
  • 2 mangos, cut into cubes
  • 4 tablespoons dehydrated cranberry
  • 1/8 red onions, cut in pen

Preparation

Bread the slices of goat cheese, passing flour, egg and a mixture of bread with fine herbs. If necessary, embed twice.
Heat a skillet over medium heat with Nutrioli® Pure Edible Soybean Oil. Fry the cheese until golden brown on both sides and reserve.
For the vinaigrette, blend all the ingredients except the Oli oil from Nutrioli® Extra virgin olive oil, until a homogeneous mixture is obtained. Still liquefying, add the oil in the form of thread. Reservation.
In a bowl mix spinach with avocado, mango, blueberries and purple onion.
Serve the salad with a few slices of fried cheese and serve with the raspberry vinaigrette.

PRESENTATION

Serve in an extended dish with the raspberry vinaigrette, accompany with some fish or meat cut.

TIPS

To cut even slices of goat cheese, freeze it for 40 minutes, so it will be firm and will not crumble when sliced.
