Ingredients

8 portions
  • 1 mango, chopped into cubes
  • 1 avocado, chopped into cubes
  • 1/4 red onions, finely chopped
  • 2 tomatoes, medium, chopped into cubes
  • 2 cloves garlic, finely chopped
  • 1/2 cups fresh coriander, chopped
  • 1/2 cups pistachio
  • 1 lemon, just the juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 1/2 cups quinoa, Cooked

Preparation

Mix all the ingredients in a bowl and serve cold.

PRESENTATION

Serve cold and decorate with a little coriander.

You can add the vinaigrette of your choice.
