Mix the wine with lemon juice and mustard using a whisk, gradually add the oil. Add the shallot, salt, and pepper. Set aside. Slice the zucchini thinly lengthwise. Bring water to a boil in a saucepan and cook the zucchini slices for 4 minutes. Remove from hot water and place them in a bowl of ice water to stop the cooking and retain the color.
