Ingredients

1 portion
  • 6 figs, semimaduros
  • 20 grams butter
  • 2 teaspoons sugar
  • 100 milliliters balsamic vinegar

Preparation

Wash and dry the figs well and cut them into slices. On a pan melt the butter over medium heat.
Pour the figs over the melted butter and let them take color. Approx. 5 mins Sprinkle the sugar and mix the ingredients until the pulp of the figs makes a pastit.
Remove from heat and let temper the mixture. Add 100 ml. of balsamic vinegar to the pan. This will cause the waste to peel off and mix with each other. Move with a shovel.
Pour the mixture into a blender and add a bit of olive oil. When mixing this, the figs will be undone a little and the mixture will be homogeneous.
Separate in a sauce boat. Allow to cool to room temperature. The consistency of this sauce is similar to that of mayonnaise.

PRESENTATION

You know very well about a salad of caramelized pears and feta cheese. Checked!

TIPS

If it was too acidic you can take an extra spoonful of sugar and mix it in the blender. If it was too sweet, add a little more vinegar.
