For the guacamole: In a molcajete, crush onion, garlic, coarse salt, and lime juice until a purée is formed. Add avocado pulp and mix. Add chopped cilantro and mix with a spoon. Add fresh árbol chile and mix. Add tomato and Cotija cheese. Serve cheesy guacamole with tortilla chips.
