Preparation
Put the serrano peppers in a large saucepan with boiling water. After 5 minutes, add the green tomatoes. After about 3 minutes, remove the pan from the heat and drain off its contents.
In a similar food processor, make a puree with chilies, green tomatoes, garlic, pickled chili and liquid chilies. Add salt and cilantro and grind with 2 quick beats.
In another bowl, mix the previous preparation with avocado and onion. Rectify salt and pepper if necessary.
