Rich salsa of green tomatoes with fresh serrano peppers and a touch of pickled chiles. Take avocados in cubes to give a richer flavor.

Ingredients

10 portions
  • 5 serrano peppers, cool
  • 300 grams green tomato, without shell
  • 1 clove garlic
  • 1 tablespoon liquid of 1 can of pickled chilies
  • 1 pickled serrano pepper, without seeds
  • 1 teaspoon salt
  • 1/2 cups fresh coriander, chopped thick
  • 1 avocado, peeled, boneless and diced
  • 1/3 cups onion, finely chopped

Preparation

Put the serrano peppers in a large saucepan with boiling water. After 5 minutes, add the green tomatoes. After about 3 minutes, remove the pan from the heat and drain off its contents.
In a similar food processor, make a puree with chilies, green tomatoes, garlic, pickled chili and liquid chilies. Add salt and cilantro and grind with 2 quick beats.
In another bowl, mix the previous preparation with avocado and onion. Rectify salt and pepper if necessary.

TIPS

The base of the sauce can be prepared ahead of time. Before serving, add the avocado in pieces to prevent it from darkening.
