Preparation
In a small pan, heat 1 tablespoon olive oil over medium heat. Add the capers and let them cook for 2 to 3 minutes. Remove from heat and let cool.
In a small bowl mix the juices, garlic, parsley and the remaining tablespoons of olive oil. Season with salt and pepper.
Add the capers together with the oil in which they were cooked. Adjust the seasoning and add more citrus fruits if necessary.
