Ingredients

4 portions
  • 3 egg whites
  • 1 tablespoon Dijon mustard
  • 1/4 cups olive oil
  • 1 tablespoon vinegar
  • 5 drops lemon
  • 1/8 teaspoons salt
  • 1 cup canola oil
  • 1/4 bunches parsley, chopped
  • 2 gherkins, in chopped brine
  • 2 tablespoons capers, chopped
  • 1 teaspoon tarragon

Preparation

Make a mayonnaise by beating the egg whites with Dijon mustard, olive oil, vinegar, lemon and salt in the blender. While stirring, add the canola oil slowly until the mixture reaches the consistency of mayonnaise, maybe a little more or less than a cup of oil is needed. All this can be replaced by purchased mayonnaise.
Chop the parsley, pickles and capers. Mix in a bowl with the tarragon. Use a wooden spoon. Add the mayonnaise and mix with an enveloping movement. This hard seasoning refrigerated and hermetically covered maximum three days. Substituting mayonnaise made at home for mayonnaise can last up to six days.
