Ingredients

4 portions
  • 3 egg whites
  • 1 tablespoon Dijon mustard
  • 1/4 cups olive oil
  • 1 tablespoon vinegar
  • 5 drops lime
  • 1/8 teaspoons salt
  • 1 cup canola oil
  • 1/4 bunches parsley, chopped
  • 2 pickles, chopped in brine
  • 2 tablespoons capers, chopped
  • 1 teaspoon tarragon

Preparation

Make a mayonnaise by beating the egg whites with the Dijon mustard, olive oil, vinegar, lemon and salt in the blender. While whisking, slowly add the canola oil until the mixture reaches the consistency of mayonnaise, a little more or less than a cup of oil may be needed. All of this can be substituted for purchased mayonnaise.
Chop the parsley, pickles and capers. Mix in a bowl with the tarragon. Use a wooden spoon. Add the mayonnaise and mix in an enveloping motion. This dressing lasts refrigerated and covered tightly for up to three days. If you substitute the homemade mayonnaise for mayonnaise from a pot it can last up to six days.

PRESENTATION

Serve to accompany fish and seafood.
