Make a mayonnaise by blending the egg whites with Dijon mustard, olive oil, vinegar, lemon, and salt in a blender. While blending, slowly add canola oil until the mixture reaches mayonnaise consistency; you may need a little more or less than one cup of oil. All of this can be substituted with store-bought mayonnaise. Chop the parsley, pickles, and capers. Mix in a bowl with tarragon. Use a wooden spoon. Add the mayonnaise and fold in gently. This dressing lasts refrigerated and tightly covered for up to three days. If homemade mayonnaise is replaced with store-bought mayonnaise, it can last up to six days.
