Ingredients: 8 radishes, well washed and finely chopped; 1 red onion, sliced; 4 Habanero chiles, finely chopped; 1/2 cups fresh cilantro, finely chopped; 1/2 cups orange juice; 1/2 cups vinegar; salt, to taste

Put the sliced onion in a bowl and add the orange juice and vinegar. Season with salt. Roast the habanero peppers by placing them directly over the fire for about 5-10 minutes, then put them in a tightly sealed plastic bag to "sweat the peppers" and remove the skin. Chop them finely and mix them into the onion.
