Toast the spices. The cumin, oregano, cinnamon, cloves, pepper, and garlic. Use a comal. After they are well toasted, grind all the spices, preferably in a mortar. Dissolve the achiote with the orange juice and add the 3 tablespoons of oil. Stir the spices with the achiote and heat until it comes to a boil. Use this marinade for any meat, preferably pork, and let it marinate overnight.
