Pickled onions are a typical sauce as an accompaniment to the cochinita pibil, it is a preparation of purple onion with habanero pepper pickled with white vinegar and a touch of lemon, flavored with oregano. These onions are delicious.

Ingredients

10 servings
  • 2 pieces of red onion filleted
  • 3 pieces of habanero pepper cut into strips
  • 1 Cup of White vinegar
  • 1/4 of Cup of lemon juice
  • 2 spoonfuls of olive oil
  • 1 tablespoon of Salt
  • 1 pinch of allspices milled
  • 1 tablespoon of oregano

    Preparation

    In a bowl, mix the purple onions with the habanero pepper, the white vinegar, the lemon juice, the olive oil, season with salt, pepper and a touch of oregano. Marinate for 10 minutes and enjoy.

    PRESENTATION

    Serve your onions and accompany with cochinita.

    TIPS

    First add the vinegar that the acid in the onion is cut and they change their color and texture.
