Ingredients

10 portions
  • 3 kilos Canned tomato, whole with their juice
  • 3 tablespoons olive oil
  • 1 clove garlic, sliced delgadito
  • 1 onion, medium finely chopped
  • 1/2 teaspoons pepperoncino Italian crushed red pepper, (dried chili in flakes)
  • 1 tablespoon Kosher sea salt
  • 1/4 cups fresh basil leaf, chopped
  • 1 pinch sugar

Preparation

Put the can of tomatoes with their juices in the food processor and press until they sting a little. Go to a container and reserve.
Heat the oil in a large pot over medium-low heat. Add the garlic and onion. Cook stirring until garlic and onion are cooked (5-10 minutes for garlic and 20 minutes for onion).
Add the dry chie and let heat for 15 seconds to release its flavor and add the tomatoes with their juices.
Wait for it to boil over medium-high heat, stirring constantly and reduce the heat a little. Add salt and basil, stirring occasionally with a wooden spoon, about 20-40 minutes.
Add a pinch of sugar if the sauce is very sour.
