Asparagus is very rich and although you do not find them fresh all year round, take advantage of when it is time and prepare this recipe for asparagus with mustard vinaigrette.

Ingredients

4 portions
  • 2 tablespoons vinegar
  • 8 tablespoons olive oil
  • black pepper
  • 1/2 teaspoons Dijon mustard
  • 1 bunch asparagus

Preparation

Cut the tips of the asparagus and bring water to boil.
Boil the asparagus in salted water for 15 minutes until soft.
Put the vinegar, olive oil, salt, pepper and dijon mustard in a jar.
Stir until it thickens a little and is well stirred.
Put on the asparagus and serve.

TIPS

You can use this dressing in other salads.
