Ingredients

  • 6 white potatoes, big
  • enough Water
  • enough salt
  • 2 tablespoons butter, for the filling
  • 1 cup bacon, cut into cubes, for the filling
  • 1 tablespoon garlic, finely chopped, for the filling
  • 1/4 cups white onion, for the filling
  • 3 cups spinach, for the filling
  • 1 cup cream cheese, for the filling
  • 1/2 cups whipping cream, for the filling
  • 1 pinch salt and pepper
  • 1 cup manchego cheese, grated
  • 6 eggs
  • 3 tablespoons chives, finely chopped
  • 1/2 cups bacon, fried, finely chopped

Preparation

Preheat the oven to 200°C (392 °F)
In a pot cook the potatoes in salted water, about 40 minutes or until they are done. Drain and cool.
For the filling, heat a pan over medium heat with butter, cook the bacon until it browns, add the garlic and onion, stir constantly until the ingredients are softened. Add the spinach, cream cheese, whipping cream, and season with salt and a little pepper.
Place the cooked potatoes on a board and cut the bases lengthwise. Scoop out the potatoes with a spoon, taking care not to break their surfaces and fill with spinach with the cream, and a little cheese.
Place the potatoes on an oven tray and crack an egg in the potato. Bake until the egg is cooked to the desired term, served with chives and more bacon.

PRESENTATION

Serve the potatoes sprinkled with more bacon and fresh chives.

TIPS

You can cook the potato completely in the oven wrapped in aluminum foil with a touch of butter.
