Ingredients: vegetable oil, for frying; 1/4 cups onion, in strips; 2 cups beans, cooked; vegetable oil; 1 cup chorizo, in medium pieces; 1/4 cups Jalapeño chile, sliced; 1/2 cups Manchego cheese, crumbled, for garnish; 1 serrano chile, toasted, for garnish; tortilla chips, for accompaniment

Add the vegetable oil and onion in a skillet over medium heat. Cook until the onion turns transparent, add the beans without broth, start mashing until you reach the desired consistency and adjust the seasoning. Cook the beans for 5 minutes and set aside. Heat the oil in another skillet over medium heat and add the chorizo, then use a wooden spatula to break up the chorizo until it is in small pieces and add the jalapeño pepper. Mix all the ingredients well and cook for 5 minutes, until the chorizo is well cooked.
