Ingredients

10 portions
  • 1 1/2 cups blue cornmeal
  • 1/2 cups flour, for all use
  • 1 teaspoon salt
  • 1 tablespoon baking soda, Royal
  • 1 teaspoon baking powder
  • 2 eggs, lightly shakes
  • 1 1/2 cups milk
  • 4 tablespoons butter, melted
  • enough unsalted butter, for the comal

Preparation

Sift the dry ingredients in a bowl.
Add the eggs, milk and butter and mix well.
Cook the pancakes in a hot comal, with butter or in a pan, with 2 tablespoons of dough for each pancake.
Keep the pancakes warm in a low oven until ready to serve.
