For lovers of artichokes, prepare these delicious boiled artichokes served with vegan pesto sauce, made with pine nuts, fresh basil leaves, lemon juice and olive oil. It will be the perfect entree!

Ingredients

10 portions
  • 2 artichoke
  • enough Water
  • 2 yellow lemons
  • 1/2 cups pine nut, for the dressing
  • 1 cup basil, for the dressing
  • 1 clove garlic, for the dressing
  • 1 tablespoon lemon juice, for the dressing
  • 1/4 cups Water, for the dressing
  • 2 tablespoons olive oil, for the dressing
  • 1 pinch salt and pepper, for the dressing

Preparation

To clean the artichokes, with a knife cut the top of each without reaching half. Cut the tips of the leaves with scissors and remove the smaller leaves from the bottom. Peel the stems and cut the bottom.
Add the artichokes to a pot of boiling water and salt, add the yellow lemon juice and cook for about 50 minutes or until a leaf is removed, it easily detaches.
For the pesto, in a food processor, process the pine nuts with the basil, garlic, lemon juice, water and olive oil. Season with salt and pepper.
Serve the artichoke with the dressing and enjoy.

PRESENTATION

Serve your artichokes with the pesto and decorate with more pine nuts and fresh basil.

TIPS

So that the artichoke does not turn black and rust, you can cook it with lemon.
