Preparation
We put the chickpeas to soak from the previous day in warm water with salt.
The next day wash the chickpeas and put them in a pot with hot water, a peeled carrot and a pore.
When the chickpeas are cooked, we take out the carrot and the pore and we pass them through the mill.
Add the mashed potatoes to the chickpeas together with the rice and simmer for 25 minutes.
Chop the onion in brounoisse (minced in small squares) and fry in a pan.
