Chickpeas with Rice

Ingredients

4 portions
  • 150 grams Chickpeas Legumes La Asturiana® *
  • 80 grams rice
  • 50 grams onion
  • 1 clove garlic
  • 1 teaspoon sweet paprika
  • 4 tablespoons olive oil
  • salt

Preparation

We put the chickpeas to soak from the previous day in warm water with salt.
The next day wash the chickpeas and put them in a pot with hot water, a peeled carrot and a pore.
When the chickpeas are cooked, we take out the carrot and the pore and we pass them through the mill.
Add the mashed potatoes to the chickpeas together with the rice and simmer for 25 minutes.
Chop the onion in brounoisse (minced in small squares) and fry in a pan.
When the onion begins to yellow, add the chopped clove of garlic and then remove the pan from the heat and add the paprika so that it is fried with the onion and garlic. Immediately add the sofrito to the chickpeas, let the mixture boil, add salt and serve.
