8 portions
  • 3 tomatoes
  • 4 chipotle peppers in adobo sauce
  • 1/4 cups onion
  • 1 garlic
  • 1 cup chicken soup
  • enough salt
  • enough black pepper
  • 2 cups rice, soaked and drained
  • enough oil
  • 3 cups chicken soup
  • 1/4 cups corn kernels
  • 1/4 cups pea
  • 1/4 cups carrot, in cubes
  • enough epazote
  • 1 chipotle chili, dry

Blend the tomato with the chipotle peppers, onion, garlic, a cup of chicken broth, enough salt and pepper until a homogeneous mixture is obtained. Set aside.
In a saucepan over medium heat heat the oil and fry the rice, stirring from time to time carefully so as not to break it. When the rice has a golden color, remove the excess oil and pour the tomato mixture, let it absorb slightly and add the rest of the chicken stock, the vegetables, the epazote and the dried chipotle pepper.
Bring to a boil, cover and lower the heat. Cook for 20 to 30 minutes or until the rice is cooked and the liquid is completely absorbed. Scrape 10 minutes before serving.

On an extended plate, ready to accompany your dishes.

Wash the rice 3 times to remove excess starch. Soak rice for 15 minutes in hot water and drain before frying. Frying is essential to seal the rice, preventing it from releasing too much starch during cooking, which will cause it not to mix.
