Preparation
Grate or cut the carrots into thick strips.
In a deep pot, melt the butter over medium heat. Add the carrots, sugar, ginger, salt and pepper. Rectify the seasoning.
Add water to cover the carrots (no more) and cover until it boils and take a bright orange color, about 5 minutes maximum.
Uncover the pot and continue cooking under medium high heat until the water evaporates, for 5 more minutes.
Continue cooking until the carrots caramelize in the butter and sugar mixture.
Decorate by sprinkling with parsley and enjoy.
