The green beans are a delicious garnish for meats, or fish. This way of preparing them is very simple and delicious.

Ingredients

8 portions
  • 1 kilo green bean
  • 1 onion, large finely chopped
  • 3 tomatoes, chopped
  • 4 teaspoons oregano, chopped fresh (or 2 teaspoons of dry)
  • 1/4 cups olive oil

Preparation

Preheat the oven to 220 centigrade.
Boil water in a large pot (about 3/4 full).
Cook the green beans in the water with a pinch of salt until they are green and tender, between 1-2 minutes. (The time depends on the size of the green beans)
Drain the beans and immerse in a bowl of ice water to stop cooking. Drain and reserve.
Mix the onion and tomatoes in a bowl.
Add green beans, oregano, salt and pepper.
Sprinkle with the olive oil and mix.
Put the green beans in a dish and serve.

TIPS

You can also sauté the onion a little with the tomato and olive oil to remove the raw flavor.
