Preheat the oven to 200 degrees Celsius. On a baking sheet, place the sliced onions marinated with olive oil. Bake for 45 minutes or until caramelized. On another baking sheet, place the potatoes covered with aluminum foil, making holes with a fork to cook them faster. Cook for approximately 1 hour or until tender. In a pot, heat the milk, butter, salt, and pepper over medium heat. When the potatoes are ready, remove them from the oven and peel their skin with a knife. Add the peeled potatoes, cut into cubes, to the pot with milk and mash with a fork until rustic. To serve, place the mashed potatoes on a platter and top with the caramelized onions for decoration and flavor enhancement.
