Mashed Potatoes with Caramelized Onions

A creamy mash of potatoes decorated with caramelized onions. An excellent companion for a meat or a turkey.

Ingredients

6 portions
  • 1 kilo potato
  • 1 cup milk
  • 1/2 sticks butter
  • 1 tablespoon salt
  • 1 pinch pepper
  • 1 onion
  • 3 tablespoons olive oil

Preparation

Preheat the oven to 200 degrees Celsius.
In a baking tray put the onions cut into slices and marinated with the olive oil. Bake for 45 minutes or until caramelized.
On another baking sheet put the potatoes covered with aluminum foil and making holes with a fork so they cook faster. Cook for about 1 hour or until tender.
In a hot pot over medium heat milk, butter, salt and pepper.
When they are ready, remove them from the oven and peel their skin with a knife. Add the potato (without skin) cut into cubes to the pot with milk and with a fork make a rustic puree.
To serve, put the puree in a dish and on the potatoes add the caramelized onions to decorate and enhance the flavor.
