Ingredients

4 servings
  • 1/4 of piece of onion
  • 1 clove of garlic
  • 1 tablespoon of chipotle peppers in adobo sauce
  • 1 piece of tomato
  • 1 Cup of pinto beans cooked and with broth
  • 2 cups of chicken soup
  • 1/2 teaspoonful of cumin
  • enough of Salt to season
  • enough of black pepper to season
  • enough of oil
  • 1 Cup of noodle pasta #2
  • 4 teaspoons of sour cream thick, to decorate
  • 4 teaspoons of fresh cheese in cubes, to decorate
  • 1/2 piece of avocado in cubes, to decorate
  • 4 spoonfuls of pork rind crumbled, to decorate
  • 4 leaves of parsley to decorate

    Preparation

    For the broth, blend the onion with the garlic, the chipotle pepper, the tomato, the beans with broth, the chicken broth, the epazote, the cumin, the salt and the pepper until obtaining a homogeneous mixture. Set aside.
    In a saucepan over medium - low heat, heat the oil and fry the noodle until it browns, moving constantly so that it does not burn, remove the excess fat if necessary.
    Pour the bean broth and bring to a boil. Cover and lower the heat, cook until the noodle is cooked and the liquid has completely reduced.
    Serve the noodle on plates and decorate with cream, cheese, avocado, pork rinds and parsley. Enjoy
