Ingredients

4 portions
  • 1 bunch asparagus, (big)
  • 2 tablespoons olive oil, of good quality
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon lemon zest
  • salt
  • pepper, freshly ground

Preparation

Rinse the asparagus with water. Cut the white stem below, make two 2-centimeter cuts diagonally.
Fill a pot with water halfway and bring it to a boil. Once it boils, add the asparagus and slightly reduce the heat for 2 minutes.
In a bowl add the rest of the ingredients. After 2 minutes take out the asparagus and add them and put them in this mixture.

PRESENTATION

Serve hot or at room temperature.

TIPS

Since there are so few ingredients, use them of the highest quality.
