Put in a small saucepan and mix the soy sauce, sherry, rice vinegar, ginger, and sugar. Let the marinade reduce by half over medium heat. It should be about 1/2 cup. Let it cool. Put the mushrooms in the marinade in a bag and leave them in the refrigerator for one hour.
