Preparation
Cut the potatoes into small squares, chop the celery and mint.
Pre-heat the oven to 400ºF. In a pyrex put the squares or slices of potatoes and add 2 tablespoons of olive oil and a pinch of salt and pepper.
Heat for 30 to 35 minutes, turning the potatoes over half the time.
Remove from the oven and let cool for 15 minutes.
Add the celery with the potatoes.
In a separate bowl mix 2 tablespoons of olive oil, the Natural Greek Yoplait, the lemon juice and a pinch of salt and pepper.
Pour the mixture over the potatoes and decorate with the mint.
