Ingredients

  • 5 pieces of potato cut into cubes and peeled, for the mashed potatoes
  • enough of Water
  • enough of Salt
  • 3 pieces of egg
  • 1 tablespoon of Salt
  • 1 tablespoon of White pepper
  • 3 spoonfuls of Butter
  • 2 cups of Ham cut into cubes
  • 1/4 of Cup of scallion finely chopped
  • enough of cherry tomato in halves, to decorate
  • enough of parsley finely chopped, to decorate

    Preparation

    Preheat the oven to 180 ° C (356F)
    Cook the potatoes in boiling water with salt until they are very soft, strain and reserve.
    Place cooked potatoes, egg, salt, white pepper, butter and process until smooth. Mix with ham and chives.
    Place the preparation in a sleeve, and pour the puree into a previously greased cupcake mold. Bake for 30 minutes or until they become fluffy and then cook the egg.
    Serve the cupcakes as a garnish, garnish with cherry tomatoes and chopped parsley.
